Parmesan Ingredients

oil for brushing or spraying the eggplant, 250g shredded reduced fat mozzarella cheese, and 50g grated Parmesan cheese.
Preheat your oven to 200 degrees Celsius, 400 degrees Fahrenheit, or gas mark 5. Prepare the sauce 1st and whilst that is simmering partially cook your eggplant.
To prepare the sauce heat a saucepan on a medium heat and include half with the olive oil.
Place under a broiler until the skin starts to char (do not blacken!) and bubble.
Return the saucepan for the heat and include the remaining olive oil, include the crushed garlic and the diced onions, cook for about a couple of minutes. Ensure that you combine thoroughly and spot on the low heat now to simmer for about 20 minutes.
Roughly chop the pepper and position inside a blender with the diced tomatoes, half in the basil, along with the oregano. Blend until well mixed and then location inside a sauce pan, covered below lower heat.
